Gajar ka halwa is a combination of nuts, milk, sugar, ghee, and khoya with grated carrot, It is a light nutritious dessert with less fat than many other typical Pakistani desserts, Gajar Halwa is a delicious and mouthwatering dessert that is called the gift of winter.

All over the world south Asians living they love to eat this yummy and sweet dish, in winter events whether being a wedding ceremony, function, or birthday gajar halwa is served as a sweet dish in Pakistan., It is truly a delight and fabulous dessert that you wanna have in the whole winter season, main ingredients are carrots and dry fruits with khoya and desi ghee

I used homemade desi ghee you can use any type of regular ghee or store-bought desi ghee,. I will be going to share the desi ghee recipe with my readers

So let’s begin.

Recipe tips:
  1. If you are using sweet seasonal carrots then you don’t need to add more sugar to the halwa because gajar is already sweetened
  2. Mainly gajar ka halwa is a lightly sweet dessert
  3. Cook halwa in desi ghee to get an awesome taste
  4. Use red carrots rather than oranges in cooking halwa
  5. You can vary with various types of dry fruits as well like cashews, coconuts, and walnuts

To prepare gajar ka halwa first thoroughly rinse all carrots peel and grate them set aside

Boil the fresh milk and set aside

Boil the water in a saucepan put almond and pistachio in it, leave it in hot water for 2-3 minutes then skin off them keep aside

Place grated carrots into a pot, add milk, stir well, cover and then boil until carrots are soft



Gajar ka halwa


Cook on medium flame until the liquid is evaporated, Once the carrots are boiled turn off the flame 




Heat the ghee in a separate pot or pan and sautรฉ green cardamom pods for 10-20 seconds until fragrant.

                         


Stir in the boiled carrots and mix well over medium heat. Keep stirring for 5-6 minutes and then add sugar. Mix everything again until well combined.

Cook the carrots with sugar on low-medium heat. Keep stirring until the color changes.


                   


Combine half the khoya and dry fruits with the halwa and mix

Once gajar halwa leaves the base of the pot switch off the flame and remove it from the stove

Usually, people prepare chow mein with spaghetti/noodles but here I made some changes to this recipe and cook in my style_firstly I didn’t use ketchup as I don’t like using it in chow mein or any other type of Chinese cooking  secondly I cooked chow mein with pasta instead of noodles or spaghetti 
This will likely become one of your go-to dinner recipes because it's very easy to make yet it tastes so good besides a wholesome recipe

A big bowl of homemade chicken chow mein is way more satisfying and can be made with ease_tender pieces of chicken breast are marinated in salt, black pepper, cornflour, and white egg and then deep-fried until lightly browned_to add some crunch and a colorful combination of chopped vegetables like carrots, cabbage, spring onion, green or red capsicum are added, an authentic savory sauce coats each chewy Italian pasta for an irresistible dish the whole we love

Ingredients that are used in the recipe:
Meat: I used broiler chicken breast but the best part of the chicken is thigh meat that is also tender and juicy_i prefer using thigh instead of breast
Veggies: green cabbage, carrot, spring onion, and capsicum are added to the recipe but you can use any other veggies of your choice like peas, yellow and red pepper, purple cabbage, and beans  
Sauces: red chili sauce, soya sauce, white vinegar, Worcestershire sauce along with sesame oil which is the main ingredient of this recipe_adding sauce of your choice is up to you
I skipped adding ketchup and alternatively, added chili sauce in my recipe as I understand red chili sauce can enhance the taste of chow mein rather than ketchup
Ketchup is considered the main ingredient of the recipe alternatively can be used as chili sauce or garlic sauce as well
Spices: I used black pepper, salt, cornflour, white pepper, and chicken powder_you can use red chili flakes too if you are a spice lover
Chowmein noodles: this recipe can be used in many verities of noodles, spaghetti, egg noodles, Italian pasta, or macarons as well

Tips For Cooking:
I cook the chicken first in hot oil to create a lightly golden surface. The meat also gets an extra layer of texture from the small amount of cornstarch added to the marinade. The lean poultry cooks in just a few minutes and then gets transferred to a plate so it doesn’t dry out.

What Vegetables Go in Chow Mein:
Adding nutritious vegetables brings vibrant colors to the dish and more texture contrast. The cabbage, carrots, capsicum, and onions are sliced thin so they cook quickly and blend in nicely with everything

To make this recipe firstly marinate the chicken pieces rinse the chicken breast thoroughly and then cut it into strips and put it in the bowl

Marinate the cut pieces of chicken in a few spices to infuse flavor onto the surface of the protein for added flavor_Add cornflour, salt, black pepper, and white egg to the chicken

Stir to combine well and keep in the fridge for 30 minutes for marination       

                 


Boil the water with 1 tsp salt and 2 tbsp oil in a large-sized pot_Bring it to a boil then put the pasta in the water and cook for around 7-8 minutes on the high-medium flame_Drain the pasta onto the colander then set aside

Heat the oil in the wok and fry marinated chicken strips until evenly light brown_Drain the fried chicken strips on the plate

Set aside, Once all the ingredients are cut, fried, and ready to go, it’s time to stir-fry!

Heat the oil and add chopped ginger-garlic to the oil_Fry them for a minute on medium flame. Put chopped cabbage, carrots, and capsicum into the oil and sautรฉ them together for 1-2 minutes on the high-medium flame

Then add half the quantity of spring onion and further, keep on stirring by adding green chilies slices. Stir-fried veggies hardly will take 3-4 minutes

Now lower the flame to low and start adding spices to the veggies such as black and white pepper, salt, and chicken powder

Keep on stirring further for a minute then put fried chicken strips

Keep mixing by adding soya sauce, chili sauce, Worcestershire sauce, and white vinegar

Long Chiray…. a unique name with a unique recipe, In Pakistan, you will see Dehli families making these at special parties. The special sauce which they serve with the Chirays is so delicious and different in taste.

Long Chiray is a food street recipe that is being sold at a very cheap price. people fond of eating this street food snack. this snack also is eaten in Dehli India. From right there this street food snack comes, these chi rays contain two types of fritters and kababs along with tangy sauce and onion slices. Chiray is also called Long Chura. I tried to make long chiray-like street food. but can be said it is the best than outside.

Recipe Note:

Chutney: I prepared a long chura sauce with amchur (dry mango) and tamarind. you can skip amchur you can use only tamarind pulp with white vinegar or lemon juice.

Dumplings: in long chiray are added plain dumplings and red dumplings with different shapes. while you can skip red one dumplings. these plain dumplings are soaked in room-temperature water

Orange Dumplings: to make orange dumplings batter I kept the same except for adding red food color. these dumplings aren’t soaked in water

Long Chiray Kababs Long chiray kababs are the main part of this snack. these are made of a combination of two flours. gram flour and rice along with herbs and basic spices. knead the gram flour as dough to make kabab

How to Make Long Chiray?

Peel the garlic cloves and boil the dry tamarind ( amchur).soak the tamarind in water. Peel and chop the onion. green chilies and coriander leaves

In a blender jar put cooked amchur, tamarind water, garlic cloves, chili flakes, salt, black salt, and cumin seeds.

Next, blend them to a smooth paste. in the last add red food color to the chutney. chutney consistency keep thin or thick it's up to you

Now take gram flour (besan) in a separate bowl and combine
red chili powder, salt, cumin seeds, and baking soda.

Mix them very well and begin to dissolve the batter by adding water little by little. once the batter reaches a thick pouring consistency. stop adding water to the batter.set it aside.

Take another bowl and add gram flour, rice flour, red chili powder, chaat masala, salt, baking soda, crushed coriander powder, crushed cumin powder, and oil.

                                                    


Stir to combine well. next, add chopped onion, chopped coriander leaves, and green chilies, now begin to mix with the hand. and give it a dough shape. and leave it aside for rest

Firstly divide the dumpling batter into two portions. then start frying the dumplings. heat the oil and start frying the dumplings on a medium flame.

Once they started floating in the oil flip them one by one Keep stirring to bring evenly color to the dumplings. once they turn golden brown drain them out of the oil

Take the remaining dumpling batter which we have separated initially. now add orange food color and 2 tbsp water to the batter. stir to mix well. keep remembering orange dumplings are consistently a bit thinner than plain dumplings. leave it aside for 10 minutes

Meantime take room temperature water in another bowl and soak all fried dumplings in the water for 5 minutes. and after 5 minutes take all dumpling by slightly pressing each dumpling to remove water from this

Now heat the oil and start frying the orange dumpling in medium-hot oil. start putting them with the help of a spoon. keep remembering its shape should be flattened. 

For this, you shallow fry the dumplings. so that its shape comes in accurate shape. if you fry dumplings in more oil your dumplings will make a round shape.

Once they are cooked from the bottom sides flip them with the help of a knife or any flat thin object. fry them the same as before and drain them out of the oil

Take the dough and start making medium size oval shape kababs of long chain. I made 6 kababs in one cup of gram flour. these kababs are shallow-fried

Fry kababs till they turn a golden brown color. keep flipping to make uniformly color over kababs. once fried take them out of the pan

Now take a serving plate and place all dumplings and kababs on the plate one by one. now sprinkle some chopped coriander and onion. long chirpy is ready to serve
